Cold extraction, by law, means keeping the temperature lower than 27 degrees.
We extract at 22-23 degrees, thus our EVO Oil has a richer aroma and greater nutrients.

We are fortunate to grow Coratina olive trees on our estate, one of the most popular and prized cultivars.
This variety has an extremely high percentage of polyphenols, which makes our Ciccolella Extra Virgin Olive Oil a veritable “nutraceutical”.
