Roll of Codfish, Potatoes and Broccoli

- 300 g of desalted codfish
- 500 g of potatoes
- 200 g of boiled broccoli
- 150 ml of Ciccolella “Faresse” Extra Virgin Olive Oil
- 1 clove of garlic
- Salt and Pepper to taste

Boil the codfish in boiling water without adding salt.
Let cool to room temperature and remove skin and thorns.
Season the cod with Faresse extra virgin olive oil, salt, pepper, chopped parsley and stir vigorously until obtaining a sort of dough.
Grate the potatoes and season with Faresse extra virgin olive oil, salt and pepper.
Spread the potato dough on parchment paper and bake at 180 °Cs for about 10 minutes.
Pan-fry the broccoli with a clove of garlic, extra virgin olive oil and a pinch of salt.
Let cool the potato puff and stuff it with the codfish dough and broccoli.
Form a roll, cut into logs and bake at 180 °Cs for 10 minutes.
Serve with a topping of broccoli cream.
