Orecchiette with Turnip Tops

 

Ingredients for 4  Quantity
Orecchiette 350gr
Turnips 1kg
Garlic 1 clove
Anchovy q.s.
Chili pepper q.s.
Salt q.s.
Oil COPPADORO q.s.

 

The recipe

 

Clean the turnip tops by removing the stalks and the hard leaves. Wash them in plenty of fresh water. In a deep pan boil the water, add salt and then put first the turnip tops and then the orecchiette.
Separately, in a large pan, heat the Coppadoro extra virgin olive oil with a clove of garlic and a dash of fresh chilli pepper.
Reduce the heat and add the anchovies, letting them cook for 3 minutes.
Check the cooking of the pasta and vegetables, if both are cooked pour everything (without cooking water) in the pan with the oil and sauté for a few minutes.
Serve and serve immediately.
